This a recipe I'm sharing with Dawn if anyone else wants to try this simple recipe feel free to do so.
Tuscan Vegetables
1/2 small zuccini sliced then cut into quarter pieces 1/2 small yellow squash sliced then cut into quarter pieces 1 medium carrot cut into 1/2 inch strips 1 small green bell pepper cut into 1/2 inch pieces 1 small yellow or red pepper cut into 1/2 inch pieces 1 small red onion or sweet onion cut into 1/2 inch pieces 1/2 can of diced tomatoes 6 freshley chopped oregano leaves or a 1/4 teaspoon dried oregano 6 freshley chopped basil leaves or a 1/4 teaspoon dried basil 3 freshley chopped Cilantro leaves or a 1/4 teaspoon dried cilantro Extra virigan olive oil to taste 1/4 cup grated parmesan cheese
Cut vegetables into quarters and 1/2 inch pieces place in a bowl set a side in a large heavyt skillet cover bottom with EVO and heat, add vegetables saute vegetables and spices cover and simmer 10-15 minutes add tomatoes cover and simmer another 10 minutes more until vegetables are tender, toop with Parmesance cheese remove from heat and serve right away
Yeilds about 2 servings.
